Michael Greenlaw is the Executive Chef at The Westin Melbourne. Michael joined the team with more than ten years’ hospitality experience in 5-star hotels as well as Michelin and hatted restaurants around the globe.
Commencing his career in the busy kitchens of Crown Melbourne, Michael relocated to London and honed his skills at the renowned Bibendum restaurant, a 2 rosette fine dining establishment. He then returned to Melbourne to gain invaluable experience at one of Australia’s best restaurants – Vue de Monde - in his role as Commis Chef.
The lure of New York City saw Michael join the team at Gilt, a two Michelin-star restaurant before he made his way made his way back to Australia to take on the role of Chef de Cuisine at Crown’s Number 8 restaurant. In 2013 he headed off to Dubai to work at the iconic Atlantis - The Palm hotel where with his brigade of chefs he established Dubai's’ first fully wood fired steak house.
Most recently, Michael has held the role of Executive Chef at Lindenderry at Red Hill, a popular restaurant in regional Victoria. His culinary creations and impressive creative flair can be experienced in Allegro, with a menu designed around modern Australian cuisine.
